Hike the Rim of a Volcano!

There are some things you do just because it would be cool to say you did it. :)
Hiking the rim of a volcano is one of them.
Capulin Volcano is no longer an active volcano, but it certainly is a beautiful day trip and casual hike. It is located in the north-central area of New Mexico, about 30 minutes off of I-25.
The Crater Rim Trail is one mile and the Crater Vent Trail (down to the middle) is 0.2 miles.
Warning... bugs galore along that rim trail, but the scenery and views are worth it. (Just don't wear white like I did as you come out coated in the tiny little buggers.)
One thing that I found interesting and just plain awesome was all the ladybugs everywhere!
